Avocado Muffin
Since there was a few fresh avocados left in the fridge, I decided to bake avocado muffin for a change. Well, tried something different and tasted good too.
Recipe
Ingredients:
350 g Self Raising Flour
250 g Butter
230 g Castor Sugar
4 Eggs (Medium Size)
400g Avocado
Method:-
1. Preheat oven to 180 C.
2. Cream butter and sugar until fluffy and creamy/smooth.
3. Add eggs one at a time and mix well.
4.Add mashed avocado alternatively with flour.
5. Bake for 30-35 minutes.

Reward Breakfast
Penang Assam Laksa
Recipe - Quick and easy ready made Assam Laksa
A - Assam Laksa Gravy
1 packet of Assam Laksa "Fish Brand" - easily available from most supermarket
1 Big tin sardine (smash into smaller pieces)
2 tbs fish sauce
3 liter water
B - ingredient
1 packet assam laksa dry noodle - soaked for 1 hours and cook
Garnishing:
1 cucumber (cut into strips)
mint leaves (use only the leaves)
1 bungan kantan (cut into small pieces)
2 big onion (sliced)
2 big red chili (cut into small slices)
1 small pineapple (cut into short strips)
Steps :
1. Put A to boil for 8-10 minutes.
2. Cook dry noodle for 10-15 minutes till completely cook.
3. Serve with garnishing above.
California Rolls
Myself and my husband are craving for Assam Laksa since last week. Tonight I cook Assam Laksa for dinner. Since Yanie & Kelvin don't like Assam Laksa, I decided to make California roll for their dinner instead.
Recipe:- Prepared Sushi Rice (A and B)
A
500g rice
7 tbs sugar
2 tsb salt
water - usual lever to cook rice
B
6 tbs Vinegar
C - Filling
3 Eggs + 1tbs sugar - Cook
10 crab stick
1 avocado - cut into slice
1 cucumber - cut into slice
10 pcs nori sheet (seaweed sheet) - cut half
mayonnaise (optional)
1. Mixed all A and cook in rice cooker.
2. When rice is cook, add vinegar and let it stand for 5 mins before switching off the cooker. Let it cool.
3. Roll nori sheet with rice and filling C.

Eggless Chocolate Chip Cookies
At 9.30 pm last night my elders daughter suggested to make cookies. Since we have all ingredient for this recipe (from my niece), we decided to start baking...........turn out well.
Recipe:
A - Sifted together
360g All purpose Flour
3 tbs cocoa powder
1 1/2 tbs baking powder
1 1/2 tbs bicarbonate soda
B
300g butter
120g brown sugar
120g castor sugar
C
150g Chocolate Chips
150g Almond nibs/any nuts
1. Cream B until light and fluffy
2. Add A (fold in only, don't beat)
3. Add C (fold in only)
4. Roll to a ball (put in fridge if too soft)
5. Bake for 15-20 mins at 180C

Chrysanthemun Jelly

Mango Slushie
Well, my chicken may not came out as i thought...But at least the dessert got a 10/10 from the whole family! :D its really rich with mangoes that are plucked by my hubby and son.. at our backyard.. The recipe is quiet simple actually its just mangoes + ice + sugar syrup + blender = happiness =) this juice reminded me the good times when im in Manilla..

Crabby Day
Today.. my hubby and me went to the market to look for fresh crab for my three angels to make for dinner.
since we bought 4kg of crab and it's quite alot, we decided to make two different dishes, which is crab vermicelli and crab porridge. i got this idea from my sister when she told me it was delicious. So yummy it's a must to try. Very simple.
First, you boil the porridge until it is cooked and then, add fresh crab in it. Put alittle bit of salt, and fresh ginger after the dish is done. Thats simple. :) okay.
my first time cook crab with vermicelli. It seems that my whole family enjoyed it very much. it tasted fantabulous. commented by yannie. Though it looks quite messy in the picture but at least it's delicious right? :)
