Avocado Muffin

Since there was a few fresh avocados left in the fridge, I decided to bake avocado muffin for a change. Well, tried something different and tasted good too.


350 g Self Raising Flour
250 g Butter
230 g Castor Sugar
4 Eggs (Medium Size)
400g Avocado

1. Preheat oven to 180 C.
2. Cream butter and sugar until fluffy and creamy/smooth.
3. Add eggs one at a time and mix well.
4.Add mashed avocado alternatively with flour.
5. Bake for 30-35 minutes.

  1. Hi! I did your recipe earlier today and was very satisfied with the taste and the looks! I would use though some vanilla sugar, to take a bit of the egg flavor, but it is just a matter of taste. Thank you so much for sharing!
